En este trabajo hemos tenido que agudizar el ingenio y dar lo mejor de nosotros mismos. Un trabajo de este tipo en un negocio local debe hacerse lo más rápido posible para no detener la actividad del mismo demasiado tiempo e incluso para no detener ciertas áreas del negocio. Además, hay que controlar las estimaciones presupuestarias porque hay que tener en cuenta la rentabilidad de la empresa si es posible. Estamos hablando de inversiones que deben dar lugar a un retorno en unos plazos determinados, de acuerdo con un plan de negocio.
Para asegurar el éxito de este proyecto, no sólo contamos con los servicios auxiliares comunes, sino que debemos contar con proveedores industriales para la climatización, proveedores de equipos de hostelería, etc.
En definitiva, un proyecto que puso a prueba la capacidad de todo el equipo. El cambio en Las Meigas ha sido radical creando un ambiente y un espacio moderno que desencadena nuevos conceptos de cocina por parte de sus responsables y equipos de cocina. ¡Una nueva propuesta que bien puede probar!
